As part of Berlin Food Week, Global Sustainable Transformation (GST) GmbH participated in Berlin Food Night at the venue AchtBerlin on October 8. The event offered an excellent platform to present innovative food concepts to an expert audience from industry, research, and gastronomy.
Together with Ludovic Gerboin, GST presented selected product developments based on yeast oil, impressively demonstrating the potential of fermentation-based lipids for high-quality food applications.

The presented products showed how biotechnologically produced lipids can be successfully integrated into various baked goods and confectionery, meeting both functional and sensory requirements.
Valuable Exchange with the Food Community
Berlin Food Night offered numerous opportunities for professional exchange with experts from the food industry as well as with innovation-interested visitors. Particularly enriching were the many inspiring conversations, the positive feedback on our product developments, and the intensive dialogue about the future of sustainable food ingredients.

Global Sustainable Transformation (GST) GmbH is pleased to be part of the newly launched European research project MYCOCIRCLE. The project is funded by the Circular Bio-based Europe Joint Undertaking (CBE JU) and brings together leading partners from science and industry to develop innovative bio-based solutions for a sustainable circular economy.
Value creation from side streams of mushroom production
The goal of MYCOCIRCLE is to transform by-products from edible mushroom production into high-quality and eco-friendly raw materials. This aims to create sustainable alternatives to chemical and animal-based raw materials that can be used in various industrial applications.
Previously underutilized residual materials thus gain new economic significance and are further developed into valuable bio-based resources. This approach contributes to using natural resources more efficiently, reducing waste, and accelerating the transition to a circular bioeconomy.
Biotechnology for a sustainable future
Within the framework of the project, GST contributes its expertise in the fields of industrial biotechnology, fermentation, and sustainable process development. Together with the European project partners, innovative technologies are being developed that strengthen bio-based value chains and reduce the use of fossil and animal-based raw materials.
MYCOCIRCLE exemplifies the potential of modern biotechnology to transform ecological challenges into sustainable innovations and create new solutions for industry and society.

Palm oil is cheap and found in many food products, but its production leads to rainforest deforestation and destruction. Therefore, the idea of lab-grown palm oil as a climate-friendly alternative seems promising. At the Technical University of Munich, this alternative oil is produced in a bioreactor using yeast fungi. This method aims to protect the climate, environment, and rainforests. It would be beneficial for both climate and biodiversity if no oil palm plantations were needed.

Georg Mayerhofer, a Bavarian farmer who grows rapeseed, is skeptical. He doesn’t believe that this new technology is a good alternative to local agriculture and regional food production.
